It's not free...but it's lunch

Lunch is a difficult meal for me...I think I've mentioned it before, but for some reason lunch is the only time of day that I become a picky eater. And my lunch frustration compounds when I have to eat on the go. This last week I bought lunch a few too many times, so I spent some time today making pork quesadillas. I could eat these most any day for lunch, and they make packing a lunch SO fast. Grab one out of the freezer, add an apple and some fruit snacks and I'm ready to go :)
(be assured that I do not hang out in the same scrubs I work in...however, there isn't much that is more comfortable :) Cook them, wrap them, freeze them...and you're done.
However, a lunch would not be complete without something awesome to put it in. Here's where we are in luck. For Christmas, my sis-in-law Tricia made us these fantastic lunch boxes (just in time because our other ones were breaking down fast!)...
They are perfect and we love them. Just wanted to add a few quotes that Grant has received about his new awesome lunch box.
"Where did you get that lunch box?!"
"How many basketballs did you have to kill to make that lunch box?"
"Do you have a leather lunch box?!"
So there you have it...if you're spending too much on lunch, make something you like in bulk, freeze it, and get a lunch box you want to take with you wherever you go :)

  4. What a great idea!! I am totally the same way with lunch-- the most frustrating meal of the day for sure. I think I am going to try this :)

  5. mmmmm...what do you flavor your pork with? That's a super good idea!
    Tim made fun of me that I used basketball fabric. It was the only orange, sturdy, vinyl fabric I could find, but I figured Grant could pull it off and make it look cool.

  6. *I use crock pot cooked pork (a couple pounds of pork, 1 c Pace salsa, 1 c brown sugar). Then my favorite Costco tortillas and shredded cheese. So easy. They are thawed for the most part by lunch, but I always pop them in the microwave for about 30 seconds!
