Yes, I know it's a weird name for these, but it's Karrie's recipe and the name just stuck :) They really don't resemble balls, but they are filled with chicken, so their name is at least half fitting. Lunch has always been a really hard meal for me. I don't feel as if I'm a picky eater overall, I like a large variety of foods, but I have a hard time eating something if it doesn't sound good, and when I pack a lunch several hours before eating it, inevitably, I will not be in the mood for it when noon rolls around. This is especially true with "normal" lunch foods such as sandwiches. So, in my attempt to not eat at the cafe in my building every day for lunch (I actually have not even eaten there once yet this semester), I have come up with some lunch foods that seem to hit the spot whenever I take them. One of those foods is chicken balls! The best way I can describe it is a homemade hot pocket :)

I made 2 batches, baked, wrapped individually and stuck in the freezer for instant lunches. So easy and delicious. I don't eat them everyday since I don't want to get sick of them, but it provides me with some variety and a lunch I get excited to eat.
Crescent “Chicken Balls”
4 chicken breasts cooked and shredded
4 oz cream cheese (regular or light)
4 oz chive and onion cream cheese
¼ c melted butter (I use a little less)
2 pkgs crescent rolls (regular or reduced fat)
Bread crumbs
Mix shredded chicken, butter and cream cheeses. Putt out rolls into 8 rectangles (2 triangle rolls together-each pkg will have 4 rectangles). Drop a few large spoonfuls into middle and fold roll around chicken mixture. Brush with melted butter and roll in bread crumbs.
Bake in a greased 9x13 slightly separated from each other (8 per pan) at 375 degrees for 20-25 mins.
Delicious alone but even better with some cream of chicken and milk "sauce" for dipping. Enjoy!
My friend makes these, but calls them "Chicken Bundles" if you would feel more comfortable not calling them balls :)
ReplyDeletei hadn't ever tried them until Dan's mom made them and now we eat them quite often. we call them chicken rolls. i will have to try the flavored cream cheese though - good idea!

2)chopped button mushrooms and sliced green onions
Ummm, hate to burst your bubble, but my family has been making these for years! It's in our family cookbook and all. We call them chicken rolls. Sounds slightly more appetizing than chicken balls :) How have you missed these at my house? Oh, yeah, you're always there for ham or turkey! That's good too!

I like to chop up water chestnuts and green onions in mine and serve them with warmed chicken gravy. There is a Campell's canned one with black pepper and sage that is better than the powder packaged gravy.
ReplyDeleteI made these for me for lunch because I have the same issue during the day and YUM! Brynlee even loves them. I have been trying to hide them from Bryce since they are so good and one batch only goes so far.
ReplyDeleteI think these are similar to something that I had at an enrichment activity and I loved them. I went out and bought the ingredients to make these the day after I read this post. But I forgot the onion/chive cream cheese so I have to get it. I'm making them this week!
ReplyDeletejust made them! They were delicious! I think part of the reason I had so much extra is my chicken breasts were really big. They are the Costco ones.
