Birthday pie


It's been awhile since I posted a recipe on here so I thought it was about time and I just happened to try a new, super easy and crazy delicious one. Grant likes cake, but doesn't love it. He does however love pie (although I don't :) When he said he wanted Cafe Rio key lime pie for his birthday I decided it wasn't worth the 1.5 hr drive to get it, but I could try to duplicate it...and it was good!
I called around to see if there were any bakeries in the area that made key lime pies, and in my search I found this recipe here online.

Ingredients:
1 14 oz can sweetened condensed milk
5 egg yolks
1/2 cup Key lime juice (I used regular lime juice)
1/2 tsp vanilla extract
zest of 1 lime
One Keebler prepared graham cracker crust
Baking sheet
Fresh sweetened whipped cream

Instructions:
Preheat oven to 375 degrees.
In a mixing bowl, gently whisk egg yolks. Add sweetened condensed milk, vanilla, lime juice and lime zest if using. Place pie crust on baking sheet and pour key lime filling into crust. Place in 375 degree preheated oven and bake for 15 minutes. Remove and let cool completely before placing in fridge to chill. Serve cold with dollops of fresh whipped cream.

The birthday boy was quite pleased with the results :)
