Yum-O

In the words of Rachael Ray, "Yum-O". Our garden has provided us with many delicious things recently so I tried to put them all to good use last night for dinner. I made fajitas...and listen to the list of fresh ingredients straight from our garden. A red and yellow bell pepper, 3 sweet onions, red and yellow tomatoes, and cilantro! SO good. It really is satisfying to eat stuff that you have grown from day 1. I am loving not paying for these things too since peppers and herbs can get quite spendy. The tomatoes are not pictured because I don't eat them but I cut them up in chunks and mixed with salt and pepper and chopped cilantro. (I hear it was good :)

So tasty. I just cut up the veggies and toss with some EVOO (there's my Rachael Ray coming out again), lime juice and salt and pepper. Saute them for about 30 minutes or until soft. Push the veggies aside and toss the meat in ithere with some more lime juice, green tabasco (our new fav) and chili powder for a little spice. Once it is brown you can stir together with veggies. At the same time prepare the tomatoes as above and I also opened a can of corn, seasoned with salt and pepper and stirred in some cilantro as well. Cook up some tortillas (if you can get the "raw" kind), grate some cheese, buy some FF sour cream and pick up some guac at Whole Foods ;)
Put it all together and enjoy!

  2. You are such a domestic diva! I have actually tried my hand a cooking these last couple weeks. last night I made southwest chicken roll ups with some corn on the cob. proud? They were actually not bad. I'm always surprised when we can actually eat the meal I cook. I think I'm going down to Provo on Monday to visit Erica...wish you were there!!

  3. Taryn, you've definitely got it figured out. Looks like all is well out in Lexington. Hope you guys are enjoying yourselves and Grant is liking dental school.
