This chicken noodle soup is one of my favorite winter soups, I love it! Since I don't have anything else exciting to blog about, I thought I'd share the recipe with you. Enjoy!
2 t chicken soup base
3 c chick soup stock (I used broth)
2 c chopped carrots
2 c chopped celery
1 c chopped onions
2 cans cream of chicken soup
1/2 c milk (whatever you have, used FF)
Roux (see recipe below)
2 c cooked diced chicken
4 c cooked noodles
salt and pepper to taste
Heat chicken soup base and stock together. Add carrots, celery, and onions, and simmer until vegetables are tender. Add cream of chicken soup and milk. Thicken with roux as desired, then add cooked chicken and noodles. Add salt and pepper, and taste to correct seasonings.
Roux:
Mix 1 c flour with 1/2 c butter.
This will make more than you need to thicken soup but can be stored in fridge and used later.

ReplyDeleteI'm pretty sure I have this same recipe and it is also one of our favorites! Have you ever tried using the frozen egg noodles? Delicious! I am hungry just looking at your picture.
